Turkey Reuben Sandwich

1 cup sauerkraut
8 slices of whole-grain bread
8 ounces sliced lean turkey
2 ounces (1/2 cup) grated reduced-fat Swiss cheese.

Preheat to 400 degrees. Drain and rinse sauerkraut. Rinse and drain again. Squeeze out moisture.

Toast bread. On each of 4 slices, place 2 ounces turkey, ¼ cup sauerkraut, and ¼ of the Swiss cheese. Top with remaining slices of bread. Wrap in aluminum foil and bake for 10 minutes or until thoroughly heated and cheese is melted.
