Ingredients:
1 package white Angel Food cake mix
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
Cran-Apple Topping:
4 red apples (e.g., Macintosh)
1/2 cup orange juice
2 tablespoons brown sugar
2 teaspoons cornstarch
8 packets sugar substitute
1 teaspoon cinnamon
1/4 cup water
1 cup cranberries
Directions:
Add the cinnamon, ginger and nutmeg to the dry cake mix and then prepare and bake following the directions on the package. Let it cool in the pan, invert on a wire rack.
For cran-apple topping:
Remove the cores and thinly slice the apples. Put them in a large skillet.
In a small mixing bowl, stir together the orange juice, brown sugar and cornstarch until smooth. Add the sugar substitute, cinnamon and water.
Pour orange juice mixture over the apples and cook over medium heat until the juice starts to bubble, stirring occasionally.
Reduce the heat to simmer and add the cranberries; simmer 10-15 minutes more or until the berries pop.
Serve the warm sauce over slices of the cake.
