Pineapple Bread

¾ cup unbleached all-purpose flour
¾ cup whole-wheat flour
½ cup oat bran
½ cup brown sugar
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt (optional)
½ teaspoon baking soda
1 can (8 ounces) crushed pineapple (in juice), not drained
½ cup egg substitute (equal to 2 eggs)
¼ cup unsweetened applesauce

Preheat oven 350 degrees. Spray an 8” x 8” pan with nonstick cooking spray.

Blend dry ingredients. Mix remaining ingredients in a separate bowl. Stir into flour mixture just until flour is moistened. Pour into pan.

Bake 40-45 minutes, or until a toothpick inserted in the center comes out clean.
