5 ounces dates, chopped (about 1 cup)
1 teaspoon baking soda
1 cup hot coffee
1 cup granulated sugar
¼ cup egg substitute (equal to 1 egg)
1 tablespoon canola oil
1 teaspoon vanilla
1/8 teaspoon salt (optional)
2 cups unbleached all-purpose flour
½ cup chopped walnuts
Preheat oven to 350 degrees. Mix dates with baking soda and coffee. Set aside to cool.
Mix in sugar, egg substitute, canola oil, vanilla, and salt (optional). Add flour and stir just until flour is moistened. Fold in nuts.
Pour into a 9” x 5” x 3” loaf pan that has been sprayed with nonstick cooking spray. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
