Apple-Potato Pancakes

Summary
If you can’t find pecans, substitute any of your favorite nuts! (NOTE: did not include plain non-fat yogurt, sour cream or applesauce)

What you’ll need
1/2 cup potato granules
1 1/2 cup boiling water
2 large whole eggs and 4 egg whites
2 tsp. granulated sugar
1/2 tsp. ground cinnamon
1 cup peeled and grated Granny Smith or Golden Delicious apple
1/4 cup pecans
1 container plain nonfat yogurt, sour cream, or applesauce (optional)

Instructions
Step 1
To prepare the potatoes, add potato granules to a medium-sized bowl. Gradually pour the boiling water over the potato granules, whisking continuously to mix and whip.
Step 2
In a small bowl, beat together the eggs, sugar, and cinnamon. Beat into the potatoes. Fold in the grated apple and chopped pecans.
Step 3
Bring a nonstick skillet or griddle treated with nonstick spray to temperature over medium heat. (If using an electric griddle, preheat to 350-380 degrees Fahrenheit)
Step 4
Cook the pancakes on both sides until golden brown. Serve hot, plain or topped with plain nonfat yogurt, sour cream, or applesauce.
